Instructions
Heat oil in a vessel. Add mustard, cumin when they splutters also add cardamom.
When the cardamom is fried, we get a nice aroma then we can add chopped onions and green chillies. Saute them.
Also add ginger garlic paste and fry till raw smell goes off.
Add chopped tomatoes, turmeric, chilli powder, coriander powder, garam masala, salt and mix well.
Fry till tomatoes are mushy. Adjust salt as per your taste.
Add boiled eggs and fry for 2-3mins.
Add coriander leaves and fry for few more minutes.
Spicy egg curry is ready to serve. Serve hot with white rice or ghee rice or jeera rice or chapati.
